Hello lovelies!
As the mornings are still remining frosty, I thought I’d bring you this warming bowl of plantain porridge recipe this week. Coupled with a nice cup of Joe, this is sure to feel your tum and leave you with enough energy to fuel your morning.
Plantain is such a versatile fruit, however, not always the easiest to find; but look around, especially in specialist food shops or food market stalls and I’m sure you’ll be in luck!
The recipe serves one, so just multiply the ingredients for as many people as you’re feeling extremely generous to cook for that morning.

Ingredients:
- 1/2 cup of oats
- 1½ cups of dairy-free milk (alter depending on consistency preference)
- 1 tbsp of chia seeds
- 1 fresh plantain
- Coconut oil (or oil of choice) for frying
- Optional: Peanut butter for topping.
Method:
- Start by preparing the plantain. To do this, first slice into diagonally cut portions.
- Next add enough coconut oil (or oil of choice) to completely cover the bottom of the pan, about ½ a centimetre thick.
- Make sure the oil is really hot before carefully adding the plantain slices to the plan; flipping using tongs regularly, until the plantain is moist, but crispy and golden on each side.
- Once cooked, removed from the pan and place on some kitchen paper to soak up any excess oil.
- Then, prepare the oats.
- Start by heating your milk of choice in a saucepan.
- Once warm (but not boiling), add oats and chia seeds and stir thoroughly until you reach your preferred consistency. Add more milk if you prefer a runnier consistency; or add less than the recipe calls for if you prefer your porridge thicker.
- Once cooked, empty into a bowl, add plantain and any other toppings you like.
- Enjoy!
Note to you – if you’ve never cooked plantain before, the amount of oil may seem a lot, but it’s the best way to cook it! And in the end, you won’t actually be consuming all of the oil.
