Brighter days have arrived and tastes are turning to lighter dishes and seasonal ingredients – which the brand new menu from Mexican-inspired restaurant Wahaca has in abundance. Created using the freshest and most sustainable produce available from brilliant British suppliers, it’s designed especially to bring some beaming rays of Mexican sunshine to summertime in the UK.

Originating from Sinaloa in the north west of Mexico, aguachile is a seafood dish similar to ceviche. With zingy, summery freshness in every bite, Wahaca’s Prawn Aguachile (£8.95) brings to the table prawns marinated in habanero chillies and fresh lime and served with avocado, salsa macha and crisp tostadas.
For a larger plate that’s perfect for sharing with a friend, the new Hibiscus Glazed Aubergine (£15.95) is tasty, zesty and bursting with umami flavour. Wedges of aubergine are roasted in a delicious hibiscus salsa until tender and slightly charred, and then served with dressed quinoa, avocado cream and homemade, nutty salsa macha. A vegetarian showstopper that’s not to be missed!
And last but certainly not least, Wahaca’s new Sunshine Bowls (from £13.50) are fresh, fabulous and packed with summer goodness. The mouthwatering flavours in these wholesome bowls comes from nearly 30 different plant varieties including baby spinach, avocado, sauteed corn, Mexican-style ‘chiltatis’, pickled cabbage, quinoa, black beans and esquites. They’re served with coconut-lime dressing and a crisp tostada plus your choice of free range chicken, ‘Halloumi al pastor’ or garlic sweet potato. Just the ticket for a nourishing park picnic or al-desko lunch if you’re not dining in!
