Wahaca joins forces with The Flour Pot Bakery to unveil Brighton’s latest sandwich sensation

Taking the humble sandwich to a bold, flavourful and marvellously Mexican new level, Wahaca this month teams up with Brighton’s acclaimed independent bakery The Flour Pot Bakery to introduce the Birria Torta (£13.50), making its debut on Wahaca’s menus from this week. Don’t hang around though, as there will only be a limited number of tortas available at each Wahaca restaurant per day – once they’re gone, they’re gone!
Inspired by the popular sandwich-style snack enjoyed throughout Mexico, it’s packed generously with slow-cooked birria beef, roasted red onion, pickled vegetables, creamy avocado, grilled cheese, coriander leaf and a punchy jalapeño aioli. But the torta’s tastiness doesn’t stop there. It’s served with a side of rich, aromatic birria broth for dipping – the ultimate umami upgrade.
The flavoursome fillings are sandwiched between two slices of freshly-baked bread, from a recipe crafted especially for Wahaca by Brighton’s very own The Flour Pot Bakery. This bespoke bake is perfect for soaking up the warming birria broth as well as housing the torta’s layers of delicious ingredients. It’s the foundation that takes this torta from tasty to unforgettable.
“When I was in Mexico last year sandwiches were everywhere, an inspired development from the classic Torta trucks you find all over Mexico City” said Thomasina Miers. “Our new torta is a love letter to that trip and all the incredible food I ate while I was there.  We wanted to capture all the deliciousness and thrill of getting stuck into a Mexican torta so we teamed up with our friends at The Flour Pot to create the perfect crusty roll to hold our insanely good fillings. I think that together we’ve created something that takes the Brighton sandwich scene to a totally delicious new place.”
