Burger and Beyond Brighton: 4 Dishes That Wowed Us at the New Lanes Opening

There’s a new arrival in the Lanes, and it has the city’s burger fans talking. Burger and Beyond Brighton — the first full-service restaurant outside London for the cult London burger brand — has opened at 56 Ship Street, a minute from the Lanes, with a smart, grown-up dining room that looks nothing like your average burger joint. We went along to see if the hype holds up. Spoiler: the burgers are superb, and it was the sauces that truly won us over.

A burger restaurant that doesn’t look like one

Burger and Beyond describes itself, cheerfully, as “a nice restaurant that specialises in burgers” — and that’s exactly the feeling inside. Warm globe lights, dark timber tables, an open frontage that spills onto the Lanes (with the pretty pink jeweller opposite): you’d never guess beef was the main event were it not for the aroma drifting from the kitchen. It sits among good company too, with the likes of Flat Iron and Pizza Pilgrims moments away, and it more than holds its own. The welcome sets the tone: the staff are warm and genuinely attentive, checking in often without ever leaving you waiting or hovering.

The Bougie Burger: order this first

The one to get is the Bougie Burger, the dish that made the brand’s name. Two patties, double American cheese, a deep, glossy steak sauce, marrow-rich mayo and sticky beef-fat onions, all stacked into a glorious, teetering mess on a glossy sesame brioche bun. Lift the lid and everything oozes — cheese, sauce and mayo cascading down the sides. It is rich, savoury and utterly indulgent, and it delivers on every bit of its reputation. Messy in the best possible way; bring napkins.

Beyond the Bougie: Picante Deluxe, Signature Tots and a proper salad

We didn’t stop there. The Picante Deluxe brings welcome heat and freshness, its patty crowned with bright coriander for a livelier, spicier counterpoint to the Bougie’s decadence. The Signature Tots were a highlight in their own right — crisp, golden and loaded with molten cheese, a shower of Parmesan and crunchy savoury crumb, the kind of side you fully intend to share and then quietly don’t.

Sensibly, we ordered something green to cut through it all: the Kale and Parmesan Salad, dressed and generously showered with cheese, is the fresh, sharp foil this kind of menu needs. It’s a small thing, but a burger place that takes its salad seriously tells you a lot.

The sauces are where Burger and Beyond Brighton really wins

If the patties are the headline, the sauces are the story. There’s a whole line-up worth working through, but the chimichurri was the one that stopped us mid-bite — herby, punchy and bright, cutting cleanly through the richness of the beef. We found ourselves dipping everything in it. It’s the detail that lifts the meal from very good to genuinely memorable, and the clearest sign of a kitchen that cares about more than the burger itself.

The verdict

Burger and Beyond Brighton has arrived with confidence and lived up to it. The burgers are as good as promised — the Bougie in particular — the sides hold their own, and the sauces, that chimichurri above all, are what we’ll be coming back for. It’s an indulgent, grown-up take on the burger, served in a room that feels like a proper restaurant. A very strong addition to the Lanes, and one we happily recommend.

You’ll find Burger and Beyond at 56 Ship Street (BN1 1AF), a one-minute walk from the Lanes and about seven from the Pier. There’s indoor and outdoor seating, walk-ins are welcome, and the kitchen runs from noon daily — with vegetarian, vegan and halal options on the menu too.
