The days are getting brighter and warmer but we still get a cold one every now and then. This recipe is for those cold gloomy days when a nice warm soup can give you so much comfort, especially with home baked bread – though we’re just sticking to the soup today. This recipe does require quite a few different ingredients and a trip to the supermarket. But it is well worth the trip because this one is so much better the day after, so you’re actually covering two meals instead of one.
- 1 onion, finely chopped
- 2 garlic leafs, finely cut
- 1 carrot, cut in thin slices
- 1 tbs olive oil
- 1 tsp oregano
- 1 tsp basil
- 2 tsp lemon pepper
- 1 tsp black pepper
- 0,5 tsp curry
- 400 g tomatoes chopped
- 400 ml lobster soup base
- 500 ml water
- 2 vegetable cubes
- 150 ml white wine
- 350 g white fish of your choice
- 400 g lobster, shrimp and scallops (one them will also do)
- 150 ml coconut milk
- cream (added by taste, can be skipped)
Chop down the hard vegetables and fry them in olive oil in a large cooking pot. Add oil if needed. Then add the tomatoes and all the spices to the mix.
After that, add the water, the lobster soup base and the white wine along with the vegetable cubes. Now let the ingredients cook for a few minutes till it starts to boil then add the white fish and cook for around 5 minutes. Finally add the rest of the ingredients and let them cook for another couple of minutes.
