Guilt Free Cauliflower Pizza

Well Summer is here, so I guess we’re a little obsessed with healthy and guilt free meals here at Brighton Journal. Now when the sun starts shining one becomes painfully aware that there is no way of dipping into the ocean or sunbathing on the beach in 20°C hidden under a big winter coat or a woollen sweater. Those clothes have to come off! But if one is willing to make a little effort in the kitchen that doesn’t have to mean that good food can’t be enjoyed, so why not try out this delicious guilt free pizza. We promise it’s really tasty.

  • 400 g cauliflower
  • 2 eggs
  • salt and pepper
  • other spice if wanted

Start with heating the oven to 190°C, cut down the cauliflower and put it into a blender. Blend till it seems kind of grainy. Then put the cauliflower in a bowl and heat in a microwave for two minutes, once this is done put the cauliflower into a cloth, close it and squeeze it into the sink to get rid of the water. Repeat one more time in the microwave and squeeze again till the cauliflower is nicely dry. Then put into a bowl with the eggs and spices and stir. Next shape the dough into a pizza base on baking paper and bake in the oven for twenty minutes. After that you can put whatever you fancy on top and bake again till the cheese is melted and a little bit brown. Enjoy!
