How To: Goats Cheese & Tomato Tagliatelle

We’re back with another handy recipe to keep you inspired throughout these Summer months. This refreshing pasta will leave you feeling satisfied sans guilt!

What you’ll need for two people:

  • One beef tomato
  • Half a log of goats cheese
  • 4 tagliatelle nests
  • Pepper to season
  • Parmesan to serve
  • A sprinkle of garlic powder
  • Basil (optional)

This recipe really couldn’t be easier. Start off by boiling the kettle as you’ll need to peel your tomato before dicing it! Once the kettle is boiled fill a saucepan to cover your tagliatelle and use the rest of the water to cover the tomato in a bowl. While the tomato skin is softening, cut your goats cheese into small pieces. When the water is cool enough for you to handle, peel the tomato. Once that’s done you can chop it into small pieces, just like you did with the goats cheese. Cook the tagliatelle for 3-5 minutes (this time will vary so be sure to check). When the pasta is cooked to your satisfaction, drain but reserve a spoonful of pasta water for the sauce. Mix together the tomato, goats cheese, garlic and basil (if using) in a large bowl with the pasta and pasta water. Plate up, top with parmesan and plenty of black pepper and you’re done! It really does only take 15 minutes and it’s always a winner in my household.
