If you’re looking for a new twist on Mexican fajita wraps, here is a recipe that will tantalize your taste buds and leave you wanting more. The opportunities are endless with fajita wraps, with a number of ingredients that can be combined with the standard list, so try this one out and trigger your adventurous side in the future.
Begin with chopping your peppers and onion into separate bowls, leaving chunky fingers of multicoloured peppers and finely diced onion that will later be combined. Next you should slice the cheeks of the mango, before slicing a grid into the fruit and reversing to produce chunks that can be easily sliced away from the skin.
Dice the chicken breasts into small chunks and begin cooking them in a frying pan glazed with olive oil. In a separate pan you can begin frying the peppers to soften them, before adding the onion into the mix. A few tablespoons of Dr Pepper can then be added to introduce a unique flavour that seeps into the current ingredients, as well as some freshly squeezed lime juice.
Once the chicken is beginning to brown, it can be transferred into the other frying pan to slowly cook alongside the other ingredients. It is important to soften the peppers, however leaving a hint of crunch to add texture to the final product. Once the surprise ingredient Dr Pepper has dissolved, the jar of tomato salsa can be heated amongst the chunky chicken and fried vegetables.
Simmer until the mixture is fully heated, serve up into a bowl and add the mango chunks that were prepared at the start. Season with some salt, pepper and a teaspoon of smoked paprika, heat your tortilla wraps in the oven for a couple of minutes and your dish is almost good to go. Sour cream, guacamole and cheddar cheese are all perfect accompaniments and will polish off an exciting dish that oozes succulent fruity flavour.

- 4 flour tortilla wraps
- 1 Lime
- 1 Mango
- 1 jar of tomato salsa sauce
- 1 can of Dr Pepper
- 1 teaspoon of smoked paprika
- Salt and Pepper
- Olive oil
- Guacamole
- Sour Cream
- Grated Cheddar Cheese
