How To: Tortilla Pizza Two Ways

When it comes to food, who isn’t up for making their lives just that little bit easier? Well here we are to help you out with speeding up those dinner times, so you can make the most of the gorgeous weather that Brighton has to offer. Today we’re presenting you with a sneaky hack to satisfy those pizza cravings whilst being somewhat healthier and quicker!

For this recipe there are a few basic things that are required, but the rest is really a matter of personal preference. We’re going to be using tortilla wraps to act as the pizza base, so of course those are a necessity! By doing this you’re creating a lighter and less stodgy base, so it’s immediately that little bit healthier. Another bonus is that tortilla wraps are easily frozen, so this is a great standby dinner or lunch recipe to have under your belt.

The second thing you’ll need is pizza sauce. For this you have a few options: I have chosen to use a tomato pizza topper, however tomato puree will work just as well, or you’re more than welcome to try your hand at making your own if you have a few extra minutes. You can be as generous or as stingy as you like with the sauce, it’s really up to you.

Another staple ingredient – cheese. For this I’ve chosen to use grated mozzarella as I believe it has the best texture and flavour. Alternatively you could use fresh but be sure to drain it and soak up excess moisture as any wetness will result in a soggy bottom! You could also use cheddar or even a mix of the two. Once again, it’s down to your preference.

Now for the fun bit… Toppings! Just like with an ordinary pizza, the choices are limitless. For my pizza I’m going for a pizza Napoli vibe with anchovies, capers, olives, red onion and a sprinkle of red chillies. To prep my ingredients I’ve simply halved the olives, chopped the onion into smallish pieces and finely chopped the chillies. For the anchovies and capers I simply drained them thoroughly. For the second pizza the toppings will be chorizo (not pictured) and plenty of chillies for an American hot style experience.

So we’ll start with the American hot tortilla pizza. By now you should have sauced and cheesed your tortilla, so simply distribute the toppings evenly in an arrangement you like.

When using meats, I like to put a layer of cheese under the toppings and over to ensure they’re fully attached to the pizza! Then just throw your chillies on and pepper and season til your hearts content!

For the second pizza, I once again distribute the toppings evenly (hands up if you think I put too many olives on mine…), being sure to go up to the sides and utilise the whole tortilla!

Again I sprinkle cheese all over the pizza, ensuring all the toppings are covered. Now both pizzas are sauced, cheesed, topped and seasoned we can put them in the oven. I’d recommend either placing the pizzas onto the shelf directly if possible or using a pizza tray with holes in the bottom to ensure the base is as crispy as possible! Cook for 10-12 minutes on gas mark 6 (timings and temperature may vary depending on the individual’s oven so just be sure to check on it so it doesn’t burn).

So this is how the American hot turned out! If you want it more or less done than this you can always adjust the cooking time, to ensure the pizza is just how you like it.

And here we have the Napoli style pizza! These delicious pizzas took no longer than 15 minutes to make, including prep time, which I think is pretty great. It’s cheaper and healthier than buying a shop bought pizza and it’s so quick and easy to make! So whether you’re cooking for kids, fancy a light bite at lunch or are just craving a pizza but don’t have the ingredients required for dough, this is for you.

Full list of ingredients and how much it cost me:

  1. ‘White with more’ tortilla wraps (wholemeal would be great too!)
  2. Tomato and herb pizza topper
  3. Grated mozzarella cheese (This is probably the most expensive part, so I would often just grate some cheddar myself)
  4. Green pitted olives
  5. Tinned anchovies
  6. Capers
  7. Red onion
  8. Sliced chorizo
  9. Red chillies

The total ingredients for this put me back just £8.01 shopping at my local supermarket. Bearing in mind these ingredients would provide me with plenty more tortilla pizza creations, I think that’s not half bad! Of course the price will vary depending on what toppings you use so you can make it as affordable or as expensive as you like.
