Tasty Tuna Tortillas

It’s yet another Friday and we can’t be bothered to cook anything complicated because we’re just too tired after a busy week – not to mention the fact that we do deserve a little treat. We all know we’ve earned it! The ingredients list for this one might seem a bit long at first glance but I assure you this is an easy treat to make and takes 15 minutes tops. I found this recipe on an Icelandic recipe sharing site called eat.rvk and has become one of my favourites when I feel like splurging. It’s great to splurge when you don’t have too feel badly about it!

  • wheat tortilla
  • 1 can tuna in water
  • 1 can tuna in oil
  • 1/2 onion
  • 1 hand full of fresh coriander
  • 1 tsp lime juice
  • 2 small can of Greek yoghurt
  • 1 can of 10% sour Cream
  • 1 red pepper
  • 1/2 tsp Mexican spice mixture. (Could be from El Dorato or anything you like)
  • 1/3 tsp Chilli spice
  • 1 pack of graded cheese
  • 1 small can of corn

Open the tuna cans and separate the tuna from the oil and the water. Mix the tuna with yoghurt, sour cream, lime juice and the spices in a bowl. Add chopped coriander, pepper and onion along with the corn and stir everything together. Finally add the cheese into the blend and it’s ready to be smeared on to the tortillas. Put salad on top and then add a final tortilla. Fry each side for about 2 minutes till they’re golden brown and the cheese has melted.

Cut it down with a pizza cutter and enjoy it with some salad, avocado, fresh coriander, salsa and sour cream.
